Mice spawn in the storage room of the house, which is the lower left room from the entrance. The same room that the bucket and the axe are located in. Only two small rats spawn in this room so you'll have to kill them over many playthroughs, as they do not respawn. You can use the axe from the same room, or the bowling ball from the previous room.
In addition to the smaller rats, one big rat will also spawn there. You'll either need to take him out with the axe, the bear trap, or come back later with a sandwich from the kitchen to subdue him. Regardless of how you do it, it will be easier to kill the small rats without him.
Lastly, it's possible that this achievement can only be done while playing as Tabby, so I would recommend knocking this achievement out before collecting all the endings.
