Every time when zombie falls backwards or simply gets stunned by melee attack or gun shot, above it's head will appear an 
icon. Quickly press that right button and you will net an insta kill. Notice that you have to close to zombie that you can see the icon over it's head.
Simply perform this 100 times and the achievement will be yours.

Update for solution:
Instant kills can be turned on automatically in the game options.
Start>Game>Automatic instant kills> ON/OFF
Having this turned on means it will automatically perform the instant kill animation when you hit a stunned enemy. This doesn't affect the achievement in any way, this is for your preference. Also to add playing in co-op, only the HOST will get progress towards this achievement.
Instant kills can be turned on automatically in the game options.
Start>Game>Automatic instant kills> ON/OFF
Having this turned on means it will automatically perform the instant kill animation when you hit a stunned enemy. This doesn't affect the achievement in any way, this is for your preference. Also to add playing in co-op, only the HOST will get progress towards this achievement.

You will get this through natural gameplay, no need to go out of your way for this. Thanks for the guide!

You need to hit a zombie with a melee weapon 
and the when a appears press it to insta kill em and do it 100 times
Note1: Turning on auto instakill in options works (My friend got it that way) then you do not have to hit only and it will instakill zombies when there else would be a above their head
Note2: Sometimes doesn't work if playing co-op if not host (my friend was host and he got it but mine stayed at 11%)

I can confirm the notes are correct as of 17/8/2015 Hope they patch it so 2nd player can also get it in co-op

As you fight the zombies with your weapons you'll see a prompt appear over the zombie to press 
. Simply do this 100 times and the achievement will unlock.
