The achievement will unlock after pressing 
on the ranking screen and it can be done in Co-Op but just make sure you have a good partner because your scores combine at the end for the "S" rank.
The guide below is for challenge 3 on normal, but you could unlock this on easy, but you will need to have good accuracy (85%+) and not lose that much health (5-10%) and on normal you will have more room for error.
It's also easy to get this on Solo Challenge 6 and 8 on easy.
The easiest way i found to do this was to play challenge 3 on normal and pick up the sparkplugs in the safehouse and then pick up the sten gun and kill all the zombies. Just kill all the zombies and pick up ammo as you kill them. The zombies stop spawning after it hits day time again so you just have to kill all the zombies left over and then proceed to the plane and put the sparkplugs in.
You could also sit by the plane on the dock and shoot the zombies and when you run out of ammo just switch to your machete and kill zombies so you can grab some ammo and continue to shoot. Credit to Calex dEUS
Tips for "S" Rank
Get towards the end of the game before attempting this because your armor helps you from losing health and helps add to your score
Try to not lose any health (Armor helps a lot)
Accuracy isn't to important but when theres not that many zombies try to get as many hits as possible without missing
Get the Fresh meet and wait until the zombie deer gets there and then throw it in the safe house and you can just light him up

Thought this didn't unlock for me as I got an S on my 1st try too on the level you suggested and nothing. Might be worth adding it doesn't unlock until after you press A on the ranking screen to continue back to the challenge select.

Oh I found it easier to manage the horde standing next to the plane on the dock switching to machete when I ran out of bullets and moving up to get more.

There are various factors that determine your overall final score and grade - accuracy, damage taken, zombies killed and how long it took to complete the challenge. I found the easiest ones to get an S ranking on were challenge four on easy or normal, challenge six on easy, normal or ironman and challenge eight on easy.
