You can get this achievement pretty much right away. When you're in free-flight mode, press start. From the menu you can select a new dragon to fly. You start as Hiccup/Toothless, so just scroll right through the list and try out the other four dragons. There's 5 total.
You don't have to fly a lot to pop the achievement. Just select the dragon, ride out from the garage for a second, press start and select a new dragon. Easy 5 points.

This can be unlocked immediately by pressing 
and going to the Dragon Hangar. Select each dragon, fly out briefly and then chose a different dragon from the Hangar. This will pop after flying with your fifth rider.
