You must be playing as Hiccup/Toothless and win a tournament. On the world map (accessed by pressing Back), tournaments are marked with a helmet icon. You can win any of the 4 tournaments, but remember that you must be the winner at the end of all 5 events.

Finish a five event tournament in first place riding as Hiccup/Toothless. This is probably easiest on the first tournament, but any one will do. If you are ever doing poorly in an event, you can always press 
and restart the event to improve. Also playing the tournament in splitscreen will leave less competition to beat (in fact for some reason your second controller will actually come in 4th in most races despite never actually finishing).
