In order to do a Viking Blitz, you must be next to another dragon and press Y. This will make your character fly towards the other dragon rider and knock them off. This attack helps greatly during all the races.
In order to get this achievement, mash the Y button at the start of a race and you should be able to get at least 3 attacks off right at the beginning. Either hang back and wait for the dragons to catch up with you to do another couple of attacks, or go after the ones you may have missed. Just get 4 attacks off in 30 seconds and this achievement is yours.

At the beginning of the race immediately mash the Y button restart the race and again mash the Y button. The game counts the 30 seconds even when restarting

Viking Blitz is the most overpowered move in the game. You should be spamming it (by pressing 
) constantly in races when trying to earn Golds in the tournament events as it is better than most of the special weapons, albeit with limited range. You must be fairly close to another racer to Viking Blitz them off their dragon. This trophy can easily be earned at the beginning of a race by staying about even with your competition and spamming .
