Relatively easy as there are mostly "normal" class levels out there and they should be very easy if you've done the campaign first.
What I do want to note however is that I suspect that "NEW" levels, whilst counted as normal in your stats, in fact don't count towards the achievement. As I currently have 45 Normal levels completed and no achievement. Luckily you can look through your play history and count the number of stages that actually have the Normal class, so may be worth double checking that and then searching specifically for normal class levels in the search function to be safe!
In terms of actually playing I've found a lot of levels look a lot more daunting than they actually are, it's always worth having a crack and seeing if it clicks before skipping!

EDIT: New levels definitely don't count but it is also bugged like the hard levels one! For anyone interested my completed Normal levels were 65 when this unlocked. So glad I enjoy puzzle games!

I believe progress is tied to levels that you "Goldy Complete". A level will be marked with a gold checkmark meaning you completed the level and collected all the Goldys. I completed 34 Normal levels before the achievement unlocked. I had 4 levels that were completed and 30 levels that were Goldy Complete.

You can't totally rely on counting your puzzles in played history. The difficulty displayed is the current difficulty, not the one you completed it on. My counter had 80 normal clears. I counted 48 Gold normal clears and 8 blue normal clears under favorites. The extra ones were graded after I completed it.

To find "easy" normal levels, you can filter by normal, and type "easy" into the search bar. lots of these levels still won't be easy, but there's many levels that come up which are extremely easy. Some even auto-completing themselves.
