Can not be done in Race mode as you have to be the one to smash the statues. Play it on Gauntlet using a expert boat, I used whiplash.
The statues are very easy to notice and the first six come in sets of two. The last statue will be at the finish line and will only appear if you got the first six and your time is under 50 seconds.

Should note, that the actual achievement says "in the Atlantis Gauntlet"!

You must hit all 7 statues in the Atlantis Gauntlet track before the timer reaches 50 seconds. The 7th statue will go back under water if you are too slow. It will take a few tries to find the statue locations and the best path to take.
