How to unlock the One Chore Down achievement in Immortals Fenyx Rising - Definitive Guide

I did this pretty easily right after you talk with Hermes about the chores for the first time. Walk over and access the board to see the available chores. One of the first ones is hunting 10 animals. In the grassy areas, below the Hall of the Gods, there are plenty of boars and bears to slaughter to complete this one. Kill 10, head back to the Hall, then mark the Chore complete on the board. The achievement will pop.

This never popped for me, even though my counter for 'More than Twelve Labours' is at 83%. I have 7/10 Hunting. 7/8 Vaults. 9/10 Exploration. 7/8 Challenges. Is it supposed to pop when I complete one of those?

I think this one focus' on the hunting labor.

There are 3 categories of tasks, simply complete one of them to get the trophy. This will happen with natural progression, just be sure to head back to the hall of gods to turn it in.
