Where you first fight the bull there is a train cart you can go inside of, after you blow the barrels up. Lead the bull towards the cart as your inside it and then jump on its head and stay on it.

Achievable in Max Nygaard's Tape 3
Once you Release the Bull, Max, make your Way to the Hanger on the Right side is an Alley lure him there and he should get stuck on a Cement Block. Simply jump on the Block and then onto his Head. Stay on until the Achievement Shows!
