For this achievement you have to play the New Game + mode.
This mode unlocks after completing New Game mode on any difficulty.
Start a New Game + (on any difficulty) and play through Floor 1 and defeat the end boss on Floor 1.
After defeating the end boss on Floor 1 you can access an extra treasure room to the right with The Golden Kitty.

Is there any trick to beating this? I can barely get past floor 3 on EASY! Im generally pretty good at these games too.... or is it just gitgud?

There is no trick (as far as I know) for completing New Game mode.
You are very close in completing it. (New Game mode has 4 floors to complete)

New Game+ achievement
This achievement is actually practically story related. On NG+ mode, each time you kill a boss of a floor, you access the room behind them, which is full of treasures. After beating the Floor 1 boss in NG+ mode, the treasure room behind it will always contain the golden Kitty. Simply pick it up, along with all your other treasure, to unlock this achievement.
