You can unlock this achievement by grappling a SAM launcher and shooting at another object (person, turret, tank, etc). It can be done on any difficulty. I recommend Easy.
SAM launcher can be found in Maggia Factories (4th mission) and in many other various maps. I suggest Maggia Factories (4th mission) or Lost Destroyer (8th mission). In Maggia Factories you will find several on or around buildings and on the Lost Destroyer you will find them on the hill sides.
You will need to land next to a SAM launcher and press and hold B button. You will then grapple it. Then you will need to aim and shoot (press RT) at another enemy before the launcher blows up.

QuasidodoJr, Seng, IV
These can be found as early as the Maggia Factories mission. They're easy to spot. They look like turrets, but are oblong and fire off groups of missiles. You use the same method as with the Howitzer. Land on the ground, grapple, aim and shoot.
