To catch an item, you attack it when it is green. You will pick it up and you can use it as a weapon. Don't pick up anything with a red circle around it as it will hurt you. These will pop after you have died. You can see how many you have caught by referring to the Statistics in the main menu.

When you beat up enemies, they'll often drop knives, hats, swords, or other items that can be grabbed. When the items are in the air and close enough to be grabbed, you'll see an obvious green ring around them. Pressing 
in their direction while in line with the item will catch it. You can then throw the item at an enemy.
You'll need to catch a cumulative total of 250 items across all plays of all game modes. It may seem like a lot but you'll likely unlock this achievement before even reaching 500 kills. Catching items will happen inadvertently very often, since you'll often be trying to attack enemies and their items will fall in front of you while attacking.
