I missed this in my first playthrough.
Convoys are the blue markers on the map (I thought they were friendlies). Wherever they start - they make their way to the castle.
If you intercept one it triggers like an 'Ambush' fight, but you basically kill them for their gear. You will need to do a couple of these if you want the cheevo for all maps (as the convoy has a couple of unique maps for you to find.
