This is quite easy to do on the "Plantation" map. There is a spoon located in a foot locker in a building over on the right side of the map if you've not already found one. Then get close to a simple guard (shorter health bars) before rushing him with a couple of quick spoon slashes. I did this at night which made it very easy.
