It took me a few tries, but it was pretty easy the last time I tried for the achievement and got it. Please note that you don't get the achievement if you restart from your last checkpoint if you mess up.

The key is to drive slow, just slow enough to where you have a good length between you and Nicole's car. She won't be going fast at all, but just press the A button every now and again for acceleration. Watch ahead of you for parked cars and oncoming traffic. The only problems I had with other cars involved a cop car driving into my lane then a slow motion area involving a semi and a bunch of logs. Just follow what I've said and you'll get it. The achievement pops when you get to the part where you ram her car for damage (the bridge).

If you suck at driving (like me), this achievement will be a pain in the neck. The solution from TheSlyKoopah didn't really offer me much so here is a full walk through for all the hazards you are going to be facing for this achievement.

NOTE: As TheSlyKoopah stated, you do not need to drive this at full speed. Ease off the gas frequently or even outright brake for sharp corners.
Also, there is no worry with hitting walls and so on - just cars - so feel free to crash into anything like road barriers, tunnel walls, etc.
Finally, if you do hit a car you need to choose "Restart Level". You cannot choose "Restart from Checkpoint" unless you are still in the first section of driving.

FIRST SECTION - You can choose "Restart from Checkpoint" while in this section
Accelerate away from the start, there are no cars to avoid in this first street except for parked cars.
Join the motorway traffic from the right side, pass the car immediately ahead of you then stay in right lane.
As you approach the 1st tunnel, wait for the two trucks to go by in the left lane just before the tunnel entrance, then pass the car in the right lane in the tunnel.
In the 1st tunnel, stay in the right lane and ease off the gas just before the end of the 1st tunnel.
At the end of the tunnel, Nicole drops to the left lane to pass a big truck. It is difficult to follow her so instead pass the truck on the right side. You will end up kissing the wall but that's okay.
There is another truck to pass before the 2nd tunnel starts and you can stay right and pass hugging the wall or cut left - up to you.
The 2nd tunnel has no traffic in it. Coming out of the 2nd tunnel is a right hand bend with traffic in the left lane - stay on the right side through this bend and into the 3rd tunnel.
The 3rd tunnel also has no traffic in it. Coming out of the 3rd tunnel is a left bend. Go into the left lane and slow down, stay behind Nicole's car.
Keep your speed down in the left lane, as you will need to brake before the truck accident site then carefully steer right to follow Nicole up the dirt path. This can be done fairly slowly to avoid hitting any cars.
There is no traffic on the dirt road section so just control your speed and drift the corners etc to follow Nicole. Do not take any detours on side roads.
When the dirt road ends and you join a paved road again, there is a checkpoint.

SECOND SECTION - You must choose "Restart Level" from here onwards
The only traffic on this paved road section is one track carrying pipes. It is on the left side of a right bend (the 2nd bend in this road) and is easy to avoid, as it is pulling over to the left side of the road.
To avoid it, you can either stay on the right side of the paved road or head slightly further right and take a short straight section of dirt road to avoid it.
Once you are past the truck there are some tight turns. Finally there is one almost 180 degree right turn before you join the motorway again.
This bend has a parked truck on the left side of it so slow down to avoid it and then join the motorway.
Stay in the right lanes but WATCH OUT FOR A POLICE CAR coming towards you in the right lane just after joining. Stay to the right side of the right lane but move away from the wall once they are past you, as there are parked cars on the wall at the top.
At the top of the hill is a left turn, almost a 180 degree turn. Brake before you reach it and stay right as two more police cars will come out of the top of the turn and head down the left lane.
Let them pass before turning left to follow Nicole. The screen might start to gray out as you are getting too far behind her (around 230-240m) but just hit the gas and you should catch her up again. I think if you get to about 250m+ behind, then you have to restart.
You will now enter the 4th tunnel which is narrow but has no traffic. There is a checkpoint in this tunnel.

THIRD SECTION - You must choose "Restart Level" from here onwards
After you exit the tunnel at full speed, you will be on a dirt road. There are easy left then right bends.
On the right bend is a truck spilling pipes and a slow-mo moment but it is simple to avoid if you stay to the right side, hugging the barrier.
You will soon emerge onto a motorway section again. Stay in the right lane for the long left hand bend as there is no traffic.
Once you start catching up to Nicole and the road bends right, you will have some traffic to pass.
DANGER! This part is tricky. Try to stay in the middle area of the road between the left and right lanes. Somehow I fluked my way though ....
Then the road narrows down to one lane each way and you are behind a car and a truck. Wait for oncoming traffic to die out before passing them.
The road the climbs uphill and bends left. You can pass the traffic in the left lane behind Nicole or on the right, hugging the wall.
The road forks, so stay left behind Nicole. Follow her (there's no traffic) uphill through a slightly twisty section and at another fork, be ready to follow her to the right.
Again its uphill, slightly twisty and there's no traffic. There is a checkpoint halfway through this section of road.

FOURTH SECTION - You must choose "Restart Level" from here onwards
At the top of the hill you rejoin a paved road with traffic going your way on the right side. It is easy to avoid, just follow Nicole.
You will go through a short tunnel then the road bends right.
DANGER! There is oncoming traffic on the left, so control your speed and keep to the right. I fluked it again, so there isn't much detail for you to follow, sorry.
Also, you are passing traffic going your way in the right lane so you may have to drive down the centre lane at reduced speed.
The road forks again. Follow Nicole to the right fork and pass the traffic going your way on the left side.
The road rejoins a motorway. Follow Nicole's route through traffic using the left and right lanes, its not too difficult.
Once you pass through the toll barriers behind Nicole's car, the achievement pops (thank fuck for that!)

Well that killed two hours of my life. Hopefully you can get out with less! See ya.

Avoid hitting other vehicles while driving to the bridge. If you hit any traffic and it happens to be the 1st section, you can restart last checkpoint (which I personally didn't do), but if it's over the 1st section (2nd or 3rd sections), you'll have to restart the whole level to try again. Achievement/trophy pops if you avoided all traffics.

Note to self: You're only allowed to hit the gates, the walls, & the trees, it's just cars and trucks to avoid hitting.
