After you take the big red token on the level, the timer will start and coins will appear on the level, you need to have time to collect all the coins before the time runs out, as soon as the time runs out, all the remaining coins will disappear. If you manage to collect the coins, you get a star. Collect 5 stars and the achievement is yours.
