Note this does not mean within the same attack. Your turn is referred to as the Yellow bar on the left. You can use many attacks whilst this depletes, then you have to wait for it to refresh before your next turn.
For this trophy, I hurt 2 enemies until I had their health to around 500 or less each (use
and 
to switch between enemies). Then I let my turn deplete. If you are low on health, then heal before doing this. You could also use Wolf's Resilience / Wolf's Edge under the 
menu. It is the Shield icon if using a shield or Weapons crossed in front of a shield if dual wielding weapons. This icon should be at the bottom of the list on the left side. This will give you a QTE when an enemy attack so you can dodge. Just make sure to not press the button after doing a dodge, or you will attack and could get a killing blow at the wrong time.
On your next turn, perform some attacks to each of the enemies to hopefully kill them both and unlock this trophy.
The fight started with 2 enemies for me and a third joined. One of the enemies that I got close to death, ended up getting a debuff that did damage over time, so they died before I could get another low on health. This is something to watch out for, although probably unavoidable. If this does happen and you only have 1 more enemy to fight, then try to kill it quickly or get this in another fight. There will be plenty in the game to try for it.
I would note that I only had to hit each enemy once for the kills so I did not get attacked in between. I can not confirm if the enemy attacking between would count as the end of your turn, I just assumed it doesn't when writing this guide.
