Sooo... I noticed this achievement after completing the game, right before starting the DLC. I used melee only during quests in the main game, started slapping everything in the DLC and went back to the main after finishing to complete the list.
The results:
4 mobs (2 Birds, 2 Vipers) are DLC only - all slapped in DLC
4 mobs, which exist in both, I only slapped in the DLC
27 (22 animals and the 5 plants from the kindex) - slapped in main
6 recurrent mini bosses (2 Pikemandas, 2 Kapaynas, 2 Slamphibians) - slapped during fights
2 bosses (Cragclaw , Floopsnoot Matriarch) - slapped after fight
This leaves Teratomo and four regular mobs (including Schnozo) without slap, when my achievement triggered.
So, here my theory:
The main bosses, which are only seen once in the game, don't count.
'Amber Armor' is equipment and does not count as a separate bird.
As the achievement is older than the DLC, DLC mobs probably don't count
Main Game mobs, which are slapped in the DLC, do count.
Kicks do count.
As 'Achieve Bean' got the trigger after slapping a Schnozo and I never hit one, it is certain that there are more possible victims, than needed for the achievement.
But even as this would make a perfect kindex fit with 37 total for me, Achieve Bean mentioned that they only needed around 30 mobs total. Sooo… presumably, after all, the DLC doesn't count and I just slapped 8 mobs, which were not on the list.
So.. why did I write this? Everyone just slaps mobs until the thing triggers.. Guess I have spent more time in theorizing this, than the devs needed to write the code for it. Probably they just gave most of the mobs a virtual checkbox to keep track if it already got a slap to the face and when the total hits 30, it's done

I can confirm that it works on creatures that are dead, as I did Meat Vortex and all bosses.

Also note that there is a possibility that this trophy could glitch, due to the Infected Pufferbirds not always counting correctly. Bosses can be hit even after you've dealt with them. Slap the corpse with your palm, the contact will be counted. There is also a glitch with infected fluffy birds, if you spank them just like that, then the contact does not count, you need to slow them down with sticky mucus and spank them.
