Anyone know why I cannot even start a co op game?

Thats seems weird. Only thing I can think is Internet. I can try hosting one and inviting you if you like?

Easy method to get 3 of the co-op achievements without a co-op partner, Don't Cross the Streams, A Little Help, Please & What Would You Two Maniacs Like To Do First?
Requires a device that you can use for Xcloud, to get around the fact you probably don't have 2
Xbox One or Xbox Series X|S lying around.
Sign into your alt account on the Xbox that your main account is on, this lets your non-gold account play online, and be signed out of your main account on that Xbox. Open the game and wait at the start game menu.
Open the gamepass app on your tablet or phone, this will be signed in to your main account, and start up the game. At the menu, start a coop game and invite your alt account.
Now follow the onscreen instruction to join the game on each device, and go outside the ship together to slap,shoot and revive each other for the cheevo's

Unless I am dumb, this doesn't work anymore because it not on gamepass anymore.

Note: PS+ is required to play online.
Since there's no matchmaking, server browser or local co-op for this game, you will need a friend who also owns a copy. To start a Co-Op game, go: Cooperative => Select Save Slot => Invite Player. Once both players are ready, press "Start Game" then the trophy will pop shortly after you have loaded into the game world. See here for the boosting thread: LINK
