Pretty straightforward - complete the following courses at Paradise VR:

Short - Standard
Short - Challenge

Middle - Standard
Middle - Challenge

Long - Standard
Long - Challenge

On standard you will keep all the rewards you unlock even if you don't reach the finish line... on challenge you will not, but only need to complete those once each. (You will probably be farming the standard courses for cash if going for 100% anyway).

For each 'go' you need a 'Play Pass' which you will get for doing various activities. At some point you will also need to unlock the 'Free Pass' which gives you unlimited goes (but I wont go in to that here as its a bit involved).
