Most of the challenges are easy to complete, so they're easily doable at the beginning of your dance session. Just make sure to come back and complete at least one a day for seven days, and you'll have the achievement.

Also, if you find a challenge you don't like, you can simply hit start, quit and reboot the game and it will be replaced, so long as you haven't made any progress on it.

Do you know if daily challenges with the Unlimited pass counts? The challenge seems more easy

As the description says. every day for seven days in a row, you must sign into the game and complete at least one Daily Challenge.
This achievement is very easy to do as soon as you start the game, because many of the first Daily Challenges you get will be basic things like "Change your Alias" or "Activate Sweat Mode for the first time," all of which require seconds of work. If you manage them appropriately (i.e. only do one per day), you will only actually have to work and dance to songs for the last day or two of the seven day stretch.
Be aware that you can manipulate what challenges the game gives you. When you launch the game, it'll display the three Daily Challenges you have available. If they seem very long and involved (such as dancing to 20 songs, or getting 25 stars, etc.), you can simply close the game app. When you relaunch the game, you'll get three new Daily Challenges. Take note though, that this only works if you haven't made progress towards a Daily Challenge. Once you make progress towards a Challenge, it stays locked there until you complete it. So if you see one Challenge you like, and you complete it but at the same time progress the other two at all, those two will be stuck there until you complete them.
There is virtually always a Challenge that'll pop up that's simply "Dance to [X song]," meaning you can simply play that song until the end, regardless of star rating, and complete that easy challenge. There are many other easy ones available, so if you see ones you don't like (such as dancing to Quartet songs or only to Just Dance Unlimited songs), don't hesitate to quit to reset them before you start your session.
