No, apparently it's luck based. I did not unlock the extreme version of Wild Wild West until reaching level 25.

To unlock the Extreme Version of a song you will need to earn Mojo. You earn Mojo by completing songs and their respective Dance Quests. Also, the higher star rating you get at the end of the song, the more Mojo you will get. Once you get a certain amount of Mojo, you will level up, allowing you to choose a random gift from the Wheel of Gifts. Unlock the Extreme version and get 5 stars on it.
