How to unlock the Friar Tuck achievement in Ken Follett's The Pillars of the Earth - Definitive Guide

Chapter 3. Having talked with the bishop's servant and agreed to wait for an answer, we need not waste time and have time to steal apples from the barrel standing near the porch and hay from the stables.

The trophy will drop in chapter six.

Chapter 6. Having started to rob the bishop in the third chapter, we still can’t stop - kleptomania is progressing. Having met William in the bishop's room and seeing the mess on the dining table, we shamelessly take the plate, knife and cup into our pockets, making no attempt to return them to their place before leaving the room. The servant will certainly shame us, but we can no longer control the “magpie instinct”.
PS Some sources indicate that to obtain this trophy you cannot feed your pony the apples and hay stolen from the bishop in the third chapter. This is not true information - feed the animal to its fullest, this action does not affect the receipt of the trophy in any way.

in chapter 6, having collected the dish, cup and knife, when leaving the Bishop's house, you need to ask the servant about building the castle, and not leave silently. Then the servant will shame Philip and force him to put the items on the table, otherwise the achievement will not be given.
