Can be done in any of the 3 modes (Sandbox is obviously the easiest)
The parameters here are to reach Space and land with the command module and any Kerbals intact.
To reach Space you must escape Kerbin's atmosphere. Kerbin's atmosphere extends to exactly 70,000m. To get above this value all you need to do is thrust straight upwards with the appropriate craft.
The craft below will get you there very comfortably (~300,000m)
Safely landing the Command module and any Kerbals is only slightly more difficult. Simply point your craft retrograde (flat surface of the command module or heat shield towards Kerbin) just after hitting apoapsis. This way the flat surface will create drag when it re-enters the atmosphere and eventually slow the craft down enough for your parachutes to safely deploy at around ~10,000m-5,000m
