To make it easier, go to options, then game settings and switch the difficulty to extra easy. To defeat Gargos I would just jump and him and hit RT and then hit 
+ RT. Then I would jump away and then repeat. Once Gargos is down to zero health you will need to do an uppercut move. The + RT works as an uppercut and can finish him off.
