Load up Killer Instinct and start a "Local Play" game
In "Local Play" go to "Versus" and select "Player vs. CPU"
Select Difficulty as "Noob"
Select Sabrewulf as your character
Start the match and win, the achievement will unlock.
In "Local Play" go to "Versus" and select "Player vs. CPU"
Select Difficulty as "Noob"
Select Sabrewulf as your character

"local play" play is gone now its simply "fight" and "noob" is now "beginner" (Hit Y to access settings and set difficulty)

This glitched for me and won’t unlock for some reason.

You can unlock this against a second controller without having to deal with AI getting in the way.
-go to versus
-choose sabrewulf
-connect player 2
-defeat player 2
repeat for all characters and their offline achievements
-go to versus
-choose sabrewulf
-connect player 2
-defeat player 2

Go to Single player, and pick a "player vs CPU" game. Press 
at the character selection screen to change the difficulty to beginner. Pick Sabrewulf as your character and anyone as the enemy. Defeat the enemy.
Just button mash through the match and you should win.

is especially hard for the AI to counter, although it does little damage. If that's too much trouble, you could also go to multiplayer, choose local play and use a second controller to give yourself a win.
