Anytime you're given the option to Record during a ceremony, simply choose Record and make something up. You'll then be on the right track to picking up all the "Recording" achievements.

In case you turned on your privacy setting to block the Kinect form recording. You can go to the view/share area and record the statues you already opened and still get the achievement.
