This achievement is closely linked to We´ll always have Paris cheevo (see that guide too).
At first, You have to play a couple of times, in order to get the characters in the circles below (those will also open secondary missions which will net the extra points you can´t get at the beginning (e.g. escorting the mice with the ingredients and escorting baby mice to the boat, plus throwing the cheese to the boat) will help you score higher.
Then through each chapter, you have to look up for those buddy character circles (they are colorless at the beginning, since they are not activated), clap and buddy character comes up and you will get to the area where the Remy buddy coins are normally located (4 per each of the 3 chapters).
Once you get all 4 Remy coins = 12 through 3 chapters (you can´t miss any of the 12 to get the cheevo), you will be able to select Remy at the beginning of the 3 chapters, play all 3 chapters as Remy and achievement will pop.
