How to unlock the Challenge Squashed achievement in Kinect Sports Season Two - Definitive Guide
~ This is very easy to get these two achievements.
For the sending a challenge, just send to any of your friends. It doesn't matter if they have the game or not.
For beating a challenge, just sign out of your account, and then sign into one of your silver accounts. Make sure the silver account that you own has your main account added to their friends list. Then, issue a challenge to your main account from the silver. Make the challenge pop darts, and get a score of 1. Send the challenge and then have your main account beat it.
Now you are 50 G richer!

Thanks for the tips about using a silver account. You can do this the other way around as well. Send a challenge from your main account to your silver account. Log into your silver account and lose the challenge. When you go back to your main account and "finish" the challenge, the achievement will pop.

I'm having trouble because it keeps telling me the Kinect Sports Server is not available- so I can't send any challenges.
Do you have any ideas why this is happening?

Beat the high score of whomever sends you a challenge. You can do this locally on one system or with a friend over Xbox LIVE.

How do you do this locally? Do the two profiles need to be friends with each other?

I just used two Xbox Live profiles on one console and the account were friends.
