How to unlock the Tornado Gardens Champion achievement in Kinect Sports - Definitive Guide
Update: I just beat his monkey ass again. I noticed I was able to steadily hit him without being hit if i alternated head shot, body shot, head shot, body shot, etc (after stunning him of course). Also, as I stated before, hit as fast as you can!
So if anyone knows what a speed bag is(really fast circles with your hands) so instead of going forwards, like normal, go counter clockwise and dip up and down(Tea bag motion up and down crouch and stand while doing it) what this will do is send hundreds of powerhits to his upper and lower body knocking him out in less than three seconds.
By the time your mind registers that he is blocking high he will have blocked all your hits... Just go up and down You will land more hits doing the dips up and down constantly yes, but this isnt always the case... the only time you should stop is when he unloads a dizzy(not a gow dizzy either lol) on you but start back up when you can hear the croud get loader.

There are 4 things to keep in mind when doing this:
1) You cannot win by spamming. You have to block and then hit him/her with a stunning blow.
2) After blocking, launch spam punches at him like HazeMonster said. BUT the thing you have to be VERY careful of doing is spamming him for too long. Be conservative in your spamming. I noticed I could spam punch him while he was dazed for a good 5 seconds at least, but going longer than that you risk having him recover in the middle of your barrage. If that happens he will block them and stun you back! That was what killed me my first couple games against him which were otherwise going my way.
3) In most of the games my other problem was blocking. I found the easiest way to carry out a low block is to make fists, holding your hands just below each of your pecks and have your forearms stay close to your chest. They should be horizontal. To switch to a high block, keep the fists but bring them up in front of your face. A lot of you probably have this figured out, but it was annoying as hell until I got good at quickly switching between the two.
4) When blocking, there is no pattern to where the champ punches whatsoever. So just try to anticipate or see where he is going to punch right before he does and block appropriately. Otherwise just guess. You will take punches no matter what, but you will be able to get in your 3 blocks eventually.
Hope this helps! I had a hell of a time with this but once I did all of these in unison it wasn't too hard for me and I won in points 2-1.
But to summarise this is what I did :
simply block until you get 3 silver glove icons
(i find whether to block low or high a rather Hit or Miss affair ....... see what i did there )
when you get your 3 silver gloves, pull your shoulder back and make an exaggerated power punch to your opponents head......it's not always a guarantee, but i got this in only three matches.
This delivers a stunning blow, as soon as you see the stars, disco roll your fists , like the speed punch bag method, flurry this attack, changing the height, head or body target, by squatting low or standing, aiming where his block .....isn't.
You opponent will now have less health than you.
Use your disco roll punches and squatting technique to finish him off.
There is an element of luck to this, but as i said, i went from , hmmm i wonder what boxing is like, to Achievement unlocked in 3 matches.

Just a heads up, I managed to win the achievement by decision. I had a knockdown in the first, and in the second and third rounds we both knock each other down once per round. So just stick with it, you don't need a knockout.
Another thing that I had trouble with at first is the actual hand position for blocking high and low. I kept having my block come down randomly and letting punches in. The trick is to put your fists together facing each other. If you are blocking high it should be just about even with your forehead (on me at least, height may require tweaking) For the body shots go about even with the belly button or even at your sides as long as your fists are facing each other it should pick it up.

Eventually you'll knock him down. He might get a few powered-up punches in, and might even knock you down once or twice, but using this tactic you're bound to eventually knock him down a total of three times in the first round for a TKO.
It might take you a few tries, but that's how I did it.
Patience and timing are the keys to winning here. Just throwing wild punches may work on lower difficulty opponents, but against the Champion it’ll just result in blocks and stuns, which aren’t good. Combos work well, following one punch with another but as soon as your opponent begins to block, withdraw and play on the defensive side yourself or else you risk getting up their power bar. Remember that it’s a game; exaggerated movements work best. If you’re going for an uppercut, for example, really throw an upwards punch so that the game actually reads it as an uppercut. When blocking, try not to keep your hands too close together, just to make sure that Kinect reads it as a block and you’re not caught off guard thinking you’ve blocked when Kinect’s read it as something else.
While stuns are your worst nightmare, they’re also your best friend. Once you’ve made a few blocks and got up your power bar, go for a wide hook shot. If it connects, it’ll daze your opponent for a few seconds allowing you to go crazy with the punches without worrying about a counter-attack or a block. Bear in mind the technique mentioned below in “Stunning Recovery” in case you’re subject to a stun yourself. No matter how you win the match, whether it be a KO, TKO or from a technicality at the end, once you win the achievement should pop.
