I don't take credit for this I saw it on x360a and tested it and it worked,
Ok first of all finish the game on rookie, now that you have finished you can choose veteran and also put on full assists and racing line. Just before the race starts you can go into race settings and drop laps to 1 instead if 3 making it much easier and quicker

and if you havent already completed it on professional you will also get that achievement as well as Boonta Clause so 2 for 1
