I found this easiest in "Fury" mode. "Fury" unlocks on the Theed map when you rank up to level 7, which takes about 20-25 plays of "Challenge" mode. Play "Fury" with the standard Rancor (if you are level seven you only have one Rancor choice). A "Fury" mode game is over when you destroy 100% of the buildings. So as you cover the whole map to destroy buildings you will have to cover the whole map to destroy the statues.
In "Challenge" mode the game is over when you hit a certain score, and even though I concentrated on just destroying statues I scored too many extra points by collateral damage and destroying enemies shooting at me. The "Challenge" mode games ended before I could get to all the statues.
Make sure to get the statues on the structure directly in front of the boat landing at the start of the level. There are two statues next to the stairs on the first landing, and six statues at the top of the structure.

how many statues are there??

There are at least 20 statues. One is right in front of you as you get off the boat, 8 on the big pyramid structure in front of the dock, and statues in every corner of the map.
