How to unlock the Mastering the Juyo Form achievement in Kinect Star Wars - Definitive Guide
During the Saber clashes, lean in slightly to slow the whole thing down, and make sure you push in hard when the glow is touching where the 2 sabers meet, i find im alot more successful if i push when the glow is going up the saber (alot of the time i win the clash even though the glow is at the top of the saber, i guess this is due to the kinect lag). Remember you can Kick, push with your left or right hand or headbutt to win the clash, do whatever you find easier.
When its your turn to attack swing your right hand left to right as smoothly and quickly as you can without being eratic and with your left hand slowly move it around the screen to try and find blocks you can pick up with force and bring your hand back to your chest quickly to throw them into the back of your opponent. Remember you can pick up more than 1 thing at a time, so keep an eye on how much attack time youve got and try and pick up a few before you bring them to your opponent.
When defending try to put yourself in a better position for picking up blocks with the force by dodging your opponents attacks instead of blocking them, i find i can only pick up blocks on the left side of the screen as kinect gets confused if i have both hands doing something so closely to one another so over compensate your positioning to account for that.
As long as you follow those tips you'll beat 3 minutes by far

once you've picked them up so they are hovering in the air, pull your hand up to your chest quickly and that seems to work

The tip about how to win the clash (time the spark on the saber intersection) was key for me. Losing a clash wastes the most time.
I could pick up the objects with my hand, but how do you throw them at the opponent? They would only hover for me.

I dueled the first guy, the trick here is to block your hits and don't mess up too many counters. They are time consuming when you mess up. What I did to shave time off also was when it was my turn to attack, I waved my hand back and forth like I was pimp slapping him with my open palm and back of the hand. It lowered his health really fast. After doing the pimp slapping way rather then full lightsaber swings I shaved off over a minute.

The saber clashes are quite simple, lean forward to slow it down then when the moving orb meets the 2 sabers push forward, kick or headbutt. Also to make the attacks go quicker, while you are "pimp slapping",lol, use your free hand to grab something with the force and pull it towards your opponent
