How to unlock the The Only Human Who Can Do It achievement in Kinect Star Wars - Definitive Guide

The easiest way to do this is the first three races of Destiny Mode as a Rookie, and turn on all assists such as steering and racing line.

At the start of the race activate speed boost (pull both arms back and then immediately push forward) and then jump. Your pod racer will "jump" over four or five pod racers in front of you without smashing into them. Then you only need to beat two or three other racers to win. Keep an eye on your power meter in the lower right-hand corner, and give yourself a speed boost as soon as it gets full. I never crashed even in tight corners with power boost on. I won each race easily my first season, usually by 4 to 6 seconds.

I recommend the first three races because you are attacked less, and the courses have few to zero obstacles. Also, remember to do this in one session which means you should allow the game to automatically start the next race. Don't exit the Podracing game until you have three wins. The achievement pops as soon as your pod racer crosses the finish line the third time, and before the medal stand pose-down.

The solution above is right on. It is easiest to do this at the beginning of destiny mode as a rookie. It doesn't matter if you have assists on or off, so just set them to high to make it easier. The one thing you must do, is do them in a row. And you can't lose a race, retry it, win and then think the cheevie will pop, because it won't. You have to win three straight with no retries. Still very easy.
