How to unlock the You Must Have Jedi Reflexes achievement in Kinect Star Wars - Definitive Guide
Start up a new game of Destiny races, choose rookie and no driving assists at all.
After some beginning story you'll get 2 choices "Race Settings" or "Start Race"
Go into Race settings and change racing line to disabled.
During the races make sure you keep an eye on your boost meter and try to always use it as soon as you can, otherwise you're losing out on free speed.
Dont try to smack into the other racers as its too risky and can slow you down.
Your engine stability is in the bottom right hand corner. it theyre yellow theyre slightly damaged, if red then its heavy. As its only 1 lap of the course in rookie mode you should be able to use your repairs whenever you need it (providing you dont repeatedly crash).
The marksman powerup is the default selection for your right hand, use it when your just behind another racer to do the most damage.
There is a map in the bottom left of the screen, so you wanna keep an eye on that to be ready for any nasty turns.
Follow those tips and you should do it easily.

Another tip: If you already know your not winning the race, hold out your left hand to make the menu appear and select "Restart" to restart your current race.
I won the first 5 races on my first try and in the last race I got stuck in a wall, so I lost the race. I thought you had to win all off them in 1 go, but decided to restart that race anyway. And the moment I passed the finish line in the number 1 position the achievement popped for me.
