"Knocked a coconut down with another coconut."
Buy the coconut from the Shop (small balls) and take it to the beach. Play with the coconut until you get the random challenge of throwing it at other coconuts. Achievement will unlock as soon as you hit the first one.
EDIT: It appears you can't purchase the coconut toy until over halfway through the game.

You first need to buy the "Coconut" from the island shop next to your house, it will be under sub-category "Small Balls" it wasn't there for me until I moved onto La Selva (the ruins) from Fiddler's Beach.
Once bought, all you need to do is play with the coconut with your cub and you should get the mini-game to knock the coconuts off their pedestals, simply knock one of them off with the coconut you throw and there you go, achievement unlocked.

Scrapdaddy
Go to the store and buy a coconut. Then, travel to Fiddler's Beach and open you toy box and select the coconut from "Small Balls". Now just play with your cub and the coconut and you will eventually get a random event that requires you to knock coconuts off a couple of poles. When you hit the first one this unlocks. You will need to play through enough of the story to unlock the coconut for purchase in your store.
