This can be done fairly easily during the natural course of playing the game and it doesn't need to be done in one go.
A successful catch will see the animation of your cub leaping into the air to grab the disc (as oppose to the 'fetch' animation of him rolling over the ground with it).
A couple of tips for you to ensure a successful catch. Allow for your cub to bring the disc back to you then wait a couple of seconds until he moves to the left of the screen to 'wait' for you to throw. Start with you arm low then flick it up and forwards in one smooth motion which will cause the disc to go up really high allowing for a better chance of your cub grabbing it.
Rinse and repeat 15 times and your achievement will pop.
*update: as 'the nayster' mentions in the comments, it would seem that any of the 'catch' animations will count as successful and go towards the achievement :)

just to say there are different animations when he rolls on the ground one of which is a catch the 15 dont have to be caught in a leaping animation i did mine all like that and no leap catches and it popped just fine

Toss a frisbee or disc lightly and aim high. Your cub will run after it and sometimes leap to catch it. Repeat 14 more times until this unlocks.
