I would suggest you wait until you have the cowboy hat to try for this achievement. You will find it in your toybox in the flying disc create. The cowboy hat seems to have a little more hang time and if you aim to throw it high in the air and really not try for a long distance your cub will have a lot of time to get under the hat and jump up high to catch the hat on it's head.

I got this without meaning by throwing the "broken record" freely to get some final XP to get to the ice stage. Think it works with any of the discs if you throw it with a slightly upward trajectory from about eye height.

Hand motion: from waist to high eye level. Don't just throw straight forward.

When you have unlocked the flying disc and are able to freely play "fetch" just throw the disc with height and distance. The cub will then start running towards the disc while it is still flying. If your cub is fast enough to catch up, he will run, jump up and snatch it out of the air.
Scrapdaddy
In freeplay, go to your toy box and take out a frisbee or other disc. Now toss it lightly and high and it will float away. Your cub will run after and eventually leap up and catch it. This may take a few tries so if you don't have it by the end of the game, just travel to your favorite place and keep on tossing discs until it unlocks.
