Very easy achievement, after you acquire both bikes on day 3 hit start and go to customise bike, tab over to the stabilisers tab and hit remove stabilisers. This can't be done on the upgrades screen when you talk to Oba it must be done from the start screen.

When you meet Oba, whether it's in his bike shop or in the open world, go into the customization menu and choose the "No Stabilizers" option for this very easy trophy to pop.

This trophy is titled "Coming of Age" and requires you to remove the training/stabiliser wheels on Nessa's bike during Day 3.
Once Day 3 begins, exit the caravan, head to the top right of the caravan park to meet the librarian. After speaking with her, head to the left to feed the geese and team up with Honkers. Exit through the goose house and follow the path up and through the woods towards the harbor. Once reaching the harbor area, you will have the choice of going to get Nessa a bike or to meet the librarian. Just choose to get the bike and head north to meet Oba. Oba will gift Nessa a bike and once you leave his shop, turn around and re-enter his store.
Speak with Oba and he'll ask about upgrading your bike. Select "Yes!" and you can purchase parts for your bikes, but to remove the wheels, press the Circle Button to enter the customize screen. Select Nessa's bike and scroll over to Stabilisers. Just select the No Stabilisers option and the trophy will unlock.
