The game is extremely easy even in survival mode. If you are worried about enemy difficulty, the enemies do not do a lot of damage and there are a lot of medkits available throughout each level.
Resource scarcity should not be a worry also if you are exploring each location thoroughly.
The enemies are weak, you can just use the hatchet in most enemy encounters or you can just run away.
The main concern in this mode is staying in the cold for too long, however, this should not be an issue as there are plenty of campfires, buildings, and berries to help with the cold. Just try to keep an eye on your temperature in the game.
