The term "win" here just means to gain at least a bronze medal across the noodle challenges and their difficulties.
There are 4 combat challenges each with 3 difficulties, so getting 8 medals across those 12 challenges will get you this achievement

The combat challenges are found in freeplay. You just need to win with any medal on eight different challenges (ie all three medals on two events and two on one). The combat challenges are basically battles with different enemies, so just use what you have learned in the campaign to get these done easily.
