How to unlock the Untouchable achievement in Kung Fu Panda - Definitive Guide
Everyone says "Level Zero" is best for this achievement, but I say that they're all wrong. The easiest level by far for this achievement is Level 9, "Howling Moon". There's only about 12 enemies in the whole level.
As you start the level, you'll swing from tree to tree and then when you first get down to ground level, quickly perform the Panda Quake move to take out the 3 wolves. Then take out the next 2 wolves (the ones that cut down the tree) with another Panda Quake.
Continue through the trees, being careful not to get hit by one of the swinging spiky logs until you reach your first sleeping wolf. Creep up to him by just pushing your left stick forwards very slightly, then hit Y to kill him in one hit. Go over the tree trunk you must knock down and kill the next 2 sleeping wolves in the same way (or perform a Panda Quake to take them both out at the same time). As you swing through the trees you'll come across a few more sleeping wolves. Creep up and kill them with the Y button.
Now, when it comes to the branch that has the swinging spiky log before it, you must time your jump perfectly in order to not get struck. I found the best way to do this was to hang from the branch until the spiky log passes you. The very split second that it does, press down, then up and then at the peak of your forward swing, let go.
When it comes to the bosses - the Wu Sisters - the easiest way to kill them is to block and Panda Quake. As soon as the battle starts, let them get a little closer (but not too close) and then perform a Panda Quake. Then run. Keep away from them while they're spinning. If they get too close, hold LT to block (it helps to have fully upgraded block). When they get dizzy, Panda Quake them again. Then it's just a case of rinse and repeat until they're defeated.
Much easier than "Level Zero". No tricky traps to navigate and 90% of the enemies will be killed without even putting up a fight.

This is most easily done after you've completed the game at least once and then go back to the third level, which is actually titled "Level Zero."
You'll want to have the Panda Quake stat maxed out. you can Panda Quake and destroy dummies without getting in range of being hit. So you just need to get the smaller green dummies that are in the trampoline room with fast attacks. Every other dummy can be removed by a panda quake. Avoid getting hit by spinning blades and firepads by timing them correctly. If you do take a hit, reload your save immediately and try again. You will not have to repeat the whole level, just the room where you took the hit.
It can be hard to tell if your health has gone down since it doesn't go quite vertical when full. So make a habit of smashing open the rice boxes when you find them. If Po eats a cake, then you've taken a hit somewhere and need to try again. If you do this often enough, you can repeat the section you got hit on without needing to complete the level and then restart from the beginning.

Also, Level 5 "Lake of Tears" is a good one. There really aren't that many enemies here either. All I did was Panda Stomp when I would get on each little island. Most of the time you can either see the crocs coming towards you or they will pop up as soon as you get to the land areas. I just got in a habit to Panda Stomp as I landed. When the crocs jump up, that gives you a slight bit of time to react. I was bitten once or twice (while in the air) so I didn't think I would get this achievement.
I did this on Panda Warrior difficulty and the crocs will die in 1 stomp when you have fully upgraded stomp.

Play through and accumulate enough coins to max out your Panda Quake. Having it fully upgraded will be crucial.
Play on level four, "Protect the Palace". Before you read on, I should warn you that this is not tested. In the first part of the mission (the flying area), you can get hit by the 2D clouds. I have gotten hit by the clouds, and not anything else in the mission, and the achievement has unlocked for me. I am 100% sure I have hit clouds in my good run.
FLYING AREA
This is the beginning of the mission. You can get hit by the clouds, but, for me, it didn't cancel out the achievement. Try your best to dodge them all, but if you cannot, try playing through the mission anyway. Make sure to kill all of the vultures, or at least not get hit by them, but do not reload.
PALACE (MAIN FLOOR)
Once in the palace, this is a breeze. Simply spam the hell out of your Panda Quake ability. Stand near the door that the thieves try to escape to (in the beginning of the mission, it is in the back of the palace, but later on gets moved to the front). If your quake is fully upgraded, it will have major range, so do not wait until the last second.
SIDE ROOMS
These are the only difficult parts, in my opinion. Each one has a doors to close and enemies (one at a time, luckily). What I did was used the Panda Quake twice to eliminate the enemy, then quickly got up and closed one of the hatches, then repeat. Make sure that when killing the enemies, you use Panda Quake two times quickly, as the first will knock you foe down, but he will get up swinging. When he gets up, you should already be in the air (to perform another Panda Quake) and the second will kill him.
BOSS BATTLE
Nothing to say here. Just spam Panda Quake again. The boss will not be able to get anywhere near you!

Level 4 guarding the palace is the meal ticket for this one. IT DOES NOT MATTER if you get hit as Crane… the UNTOUCHABLE ONLY COUNTS TOWARDS PO (at least on this level that is the case). I literally let my 3 year old play as Crane flying into every cloud and getting HIT by every vulture… then I took over as PO. Have a maxed out Panda Quake, Infinite Chi and 4x Power and just keep quaking all the time and you will get it. I did not have invulnerability on because I wanted to be able to see if I took a hit. I actually did take a hit, so I did a re-load and carried on -- popped at the end of the mish. Easy peasy. It’s 11 waves of enemies and the big boss… but with that quake they will never get near you… just take your time and keep jumping!
Level 5 - "Lake of Tears".
After trying several times in "Level Zero" i just keep playing until start of "Lake of Tears".
You have like 10 crocodiles in the entire level.
Tips.
When you jump in Islands, just go close to crocodiles when they appear and punch. You never get hited this way.
To kill crocodiles who are hiting tortoises, just get close and use "Panda Quake", (You need to have the "Panda Quake" at the maximum level there) one hit and you will kill 2 crocodiles and set free 2 tortoises, need to do 2 times.
After all, the worst part is where you meet the Seargent.
There you just need to memorize his moves. You will miss one or two times. Just load this part and we be ok.
Hope this helps.
Good play!

I did this on level 2 "Tournament of the Dragon Warrior" after getting annoyed with failing on "Level Zero"
Use panda quake all the way through to defeat the enemies. All the hammers and blades are easy to avoid. Once you gain control of Tigress run towards the juggernaut and stop a few feet in front of the target. Run in the same direction as it's turning and avoid the axes. This took me three attempts to learn the patterns but was definately easier than "Level Zero"

A tip for anyone that is wondering why they are not getting the achievement - you may need the Invulnerability cheat off. I did level 9 four times and it wasn't until I quit to dashboard and reloaded the game without this cheat that I was able to get the achievement.
Level Zero and Howling Moon levels are not bad to do this on, but I've found Lake of Tears (Level 5) to be the easiest. The crocodiles are very slow coming out of the water and very easy to kill, and usually only take one quick attack.
For the parts where you have to rescue the adult tortoises it's best to just use a panda quake since they're constantly throwing out punches at the tortoises. And you can usually hit both crocs with one panda quake. Really I wish I could give you more advice on the beginning parts but if you've gotten 100% there's not much to say. You don't even need to be that careful.
For the "Sergeant" chase scene, there's a fool proof way of beating this without getting hit. He signals where he's going to attack next pretty well, but his signals for right and left are hard to differentiate. You also might be in a bad position to dodge in time.
One way to get around this is to write down the order that he attacks. Each time that you reload the checkpoint he attacks in the same order, although the order changes if you play it (from the beginning) again. There should be a string of 22-23 attacks. So you can play through it letting yourself get hit up to about 20 attacks writing them down the entire time. Then just reload and there's no way you can fail. This is much less frustrating than just reloading if you get hit.
Another hint is to turn off cheats while you try this, so you can tell if you get hit.

Everyone who uploaded this achievement on level zero was right about this. Some have unlocked and uploaded this achievement in some different levels other than level zero, but I personally got this. If you take damage along the way (whether you have cheats active or not), reload your last save and try again. Achievement pops if you completed the level without taking damage.
Note to self: The key to unlocking this achievement is by using the panda quake.
The best level to get this achievement is absolutely Level 5 - Lake of Tears. I couldn't manage to get it on Level Zero or Howling Moon, but I got it on my second try on Lake of Tears.
The only notes for Lake of Tears is to abuse Panda Quake. On max level, it has a massive range and the alligators die in 1 hit. For the bit at the end you just need to go through it a couple times and know which attack the alligator's gonna do.
