This method requires a friend or second controller
This can be easily boosted in 5-10 minutes via split screen or playing with a friend online in "Play with friends".
If you are doing this with a friend from the main menu select "Play with Friends" and invite the other person who is getting the achievement with you.

Good spot to farm the missile hoppers. I also had trouble getting split screen racing to work from the Play or Race screen, but after I added the 2nd controller in Story mode (Start then LB+RB for a few seconds), then I could add it on Race as well.

How do you actually get split screen racing to work? I signed in my second account, pressed start and when the race starts only my primary account is racing.
