How to unlock the Veteran Performer achievement in LEGO Rock Band - Definitive Guide
Enter Tour mode to get to your Rock Den. Select the Tour (default option) and then select your vehicle. Tour mode is organized into Venues and Gigs. There are 2-3 Venues (locations) per vehicle and several Gigs (singles or sets of songs) in each venue.
To unlock this achievement you need to complete every gig in the game except the Rock Marathon and the Endless Setlist. Simply keep playing and buying new instruments like you normally would. Not all gigs are available in each Venue from the beginning so you'll have to revisit almost all of them later on to complete gigs that popped up after you left. Often when you complete a gig you'll get a popup asking you to play another one somewhere else. Accepting as many of these as possible will really cut down on the scavenger hunt you'll be going through later to find all the ones you've missed.
You can also speed things up by selecting short songs whenever you get to make your own setlist. Good choices would be Song 2 by Blur, A-Punk by Vampire Weekend, Charlene (I'm Right Behind You) by Steven and the Colberts (very short Free DLC song) and Thank You Boys by Jane's Addiction (160msp DLC, shortest song in the game).
If you hit a point where you've completed every gig available to you but there are still some you don't have access to, go to the beginning of the tour and select one of the one song Make A Setlist gigs. Keep playing Charlene over and over again, or Thank You Boys if you own it. The final gigs will unlock as you get closer to 200 gigs played. If for some reason you can't get DLC then you can play A-Punk by Vampire Weekend or Song 2 by Blur, which are both around two minutes long.
If you're lazy and don't want to play the gigs yourself, you could always play vocals on Super Easy and put the microphone up to a fan, the TV speakers, or anything else that makes noise constantly.

We played every song on expert we also did short everytime!. ended with 1578 stars and 180,000,000+ fans played 174 gigs. i dont know why this is so glitchy lol!

All of the solutions previously posted are very good. There are a few things I'd like to add.
If you are cooperatively playing this game, and don't require playing sets over and over in order to gain stars or money, you will not have played enough gigs to unlock the last couple of sets. I had 159/161 gigs unlocked and had played 175 gigs. I kept playing a one song setlist over and over until I hit 179 played gigs. That unlocked one of the missing sets. After playing that, I returned to the one song setlist (pick anything it doesn't matter) and kept playing it repeatedly until the final setlist unlocked when I had played a total of 180 gigs.
If you aren't sure how many setlists you have unlocked or how many gigs you have played, go into the office and check your stats.
Also, if you pick a one song set (not one that you choose) then pick the "short song option". It helps move this task along more quickly.
This game is pretty grindy, but not impossible. =)

Was about 210 for me. I was at 205, and then did a few more before that last gig finally came up.
I wonder if difficulty makes a difference, as I did a ton of gigs on very easy using the mic + fan trick.

This achievement is a lot simpler than it looks. You can get it the honest way, by playing through all the songs and completing all the gigs. But that can be time consuming.
If you don't wanna pay attention to the game so long, you can go into story mode on vocals, select your gig, and choose the Very Easy difficulty. Then all you need to do is set your microphone in front of a fan, and sit back for a few minutes and do something else until the song or setlist has been played through. Then just end the gig, select a new one, rinse and repeat until you've played through all the gigs.
You won't be able to play every gig in a venue right away. As you play more gigs in other venues along the way, more will unlock, which you will then have to go back to and complete. If you don't unlock gigs in venues where you don't have all the stars, have patience, and just keep checking through the venues for unplayed gigs and play them, and you'll eventually unlock the ones you're missing.

This is for people who prefer to play as a band:
If you have started the career in a multiplayer band, you do not need to be available for every gig to get this achievement. This means that 4 people can share the chore of completing all 200ish gigs and all get the achievement.
1) Start a band with 4 members signed in
2) Play as many gigs as you can be bothered with
3) Repeat (2) with whatever combination of original members you feel like (the band owner needs to be there) - anything from 1 person signed in to all 4
4) When you reach the last gig, make sure that all 4 original members are signed in and complete the gig
5) Everyone gets the achievement! And anyone who's AFK'd the majority of the setlists buys the rest of the band a pint.
This was how my band did it. We weren't certain it would work, but at least one band member really hates LRB and gave up very early on... For at least 50% of the setlists there was less than a full compliment of band members. No pics, but that doesn't mean it didn't happen!

I just got this and after spending hours just playing a one song set I decided to go through and look at what set I was missing and it was the Album Promo in The Abyss(You can check the story walkthrough for lists of sets per venue) so then I went and found one of those special sets that pop up and replayed it(it was the greatest hits album set) and I hit the required stars, after this the Album Promo set popped, completed it with full stars and got the achievement. I think some sets have a sets played requirement but if you are missing one or two just check those special sets and make sure you get the stars for the challenge
This requires you to complete every gig on world tour. This should come if you are going for Super Stars. Just go back to all the areas and play every gig. NOTE: You will probably get 1000 stars before completing every gig.
There are 161 gigs to play. Most of the time it is 3 single songs, one make a setlist, and one mystery setlist. Sometimes special ones show up. Just play all of the gigs for the achievement. Below is a gig list made by SengIV.
