You'll likely get this through normal play, but if you want it quickly, choose Jakku - Chapter 3, free play - Jakku Graveyard Fight. You'll be fighting a lot of TIEs there, and have to destroy quite a few to advance. Rinse, repeat.

Don’t try this while playing the level in story mode. I wasted quite a bit of time trying for it destroying well over 100 and didn’t pop anything

I had to replay level 2 and 3 in story mode, because the achievements did not unlock after clearing these levels for the first time. The 100 TIE Fighters achievement unlocked during my story replay of level 3. I never played any Free Play yet. So in contrast to the above comment, this achievement could unlock in story mode. Maybe we can all agree that the game is just buggy as hell.
