How to unlock the ''Get the crews to their fighters'' achievement in LEGO Star Wars: The Skywalker Saga - Definitive Guide
If you've completed all 9 films or have access to Episode 8, start the first level (Dameron's Defiance) and complete the first phase (destroying 5 cannons). Once TIE Fighters start to spawn, head close to the other ship that spawns the TIE Fighers (the one shown in the cutscene before you start the second phase). This ship will infinitely spawn TIE Fighters. Note that getting too close to that ship will spin you back around to the main objective.

Also two points to add on:
The space battles in free roam are a great way to rack up kills if you wanna get this done fast. They seem to always respawn in free roam areas once you've completed another.
The achievement tracking is slightly bugged for this achievement. Well, it was for me. Sometimes it would go up every kill I got. Sometimes it would only go up every two kills. Not sure if anyone else has had this problem, but it could be more than 100 kills

I honestly would ignore this achievement completely if your going for the completion. With the amount of smuggler missions you can get this done in them alone since you constantly get attacked by them. Just simply doing all the side quests will net you this achievement

This cannot be earned during the story in Episode I, II or III as TIEs don’t exist in those episodes. The achievement is very straightforward; destroy 100 TIEs. Chances are that you will not need to go out of your way to unlock this if you just play through Episodes IV through XI. TIEs destroyed during space engagements around planets and smuggling runs while completing planet events also count for this achievement.
Note: While playing the story, it is suggested that when you encounter TIEs that you do not complete the current objective (such as destroying turrets, etc.) until you are satisfied with your progress.
Any variation of the TIE counts for this achievement: TIE Baron, TIE Bomber, TIE Dagger, TIE Fighter or TIE Interceptor.
These are the levels you encounter TIE Fighters, to name a few:

You'll likely get this over the course of your story mode playthrough, but the space missions in free play will give you additional TIE fighters to battle as well. As best I can tell, they need to be specifically be TIE fighters or any of their variants (interceptors, bombers, etc.) but there are plenty of space battles in episodes IV-IX.
