How to unlock the ''GONK!'' achievement in LEGO Star Wars: The Skywalker Saga - Definitive Guide
In Mustafar Space there is one mission "The Final Gonk", which is the last one, but if you are looking for gonks, all of them is listen in that mission.
There are 7 to do before that one: Genosis, Kashyyk, Utapau, Cantonica, Tattooine (Mos Eisley and Jundland Wastes) and Kef Bir (Death Star II ruins)
Must have played episodes 3, 4 and 9
edit: apparently the missions are a little buggy so you can do the Final Gonk before some of the others. I still wouldn't recommend it as that mission is a good way to check what else you have done. You still have to do all of the achievement anyway.
I'm guessing the game will be patched soon, and probably get this fixed. This one isn't game breaking, but I have found others that is.

I did the Mustafar one before Kef Bir so it appears they can be done in any order

That must be a bug as the mission overview clearly state that you have to all the others first

I did not make this video but followed this guide for locations, hope it helps. All missions are in the proper order on this guide also.
This is not meant to be a full guide, and it's mostly a copy?paste from a comment I made when I first played the game, with added info. These are just some tips I've noticed:
1: The Geonosis one is locked until you complete the Utapau one.
2: Gonks can die, and they don't respawn. If one dies, you have to go back to start. In terms of fighting, the Catonica one gave me the most trouble. The Gonk there died twice, and it was the only Gonk to die during my run.
3: There is no such thing as friendly fire. If you see the Gonk being attacked, feel free to go nuts. For the Cantonica one, I recommend General Grievous. The enemies seem to go right after the Gonk Droid. Grievous has 4 lightsabers (for the enemies that use melee on the Gonk), a gun (for the enemies that sit back), and grenades. Just stick to the Gonk, and you'll be fine.
4: The one at Kef Bir was annoying af. While there are no battles, I'm not good at platforming.
5: Don't worry about the Gonk's health. Other than the last mission, it recovers its health in full after every battle.
6: The Final Gonk isn't too bad. You get three battles, and while the third one is the hardest of the three, the Gonk only lost half its health when I did it.
7: The Knights of Gonk mission doesn't count for this achievement since it's not an escort mission.

This cannot be attempted until you’ve progressed far enough into the story to have unlocked all the locations you are required to travel to. If a mission happens to be locked or unrevealed, you can purchase the rumor to show what the prerequisites are.

Locate and speak to the mission giver, and upon accepting the mission, you must escort the droid through the environment while being ambushed by 3-5 waves of enemies. They will show on your minimap as red dots, so protect the droid during each wave. If its health is depleted, you fail the mission and have the option to retry it. Successfully guide the droid to its destination and speak to it to complete the mission.

Scattered throughout the open world section of the game are seven missions that require you to help a GNK droid. Typically these require following the droid and killing waves of enemies, with a couple exceptions. You will naturally complete these missions as part of your free play completion, but if you're in the mood to get these done quickly, here are their locations:
- Jundland Wastes, Tatooine
- Canto Bight, Cantonica
- Kachirho, Kashyyyk
- Stalgasin Hive, Geonosis
- Utapau City, Utapau
- Death Star II Ruins, Kef Bir
- Mustafar Space
The Mustafar Space mission must be completed last, and will only appear after completing the first six missions. A common issue people have with this mission (and some of the space missions in general) is having your ship unable to lock on to enemy ships, making the combat much more difficult. To solve this, switch to Luke's X Wing fighter in your ship selection screen.
