Easy way to do it if you have bombs.
Build a hole throw in any enemy you have already discovered. I did more then 7 just to make it easy then throw in bomb.

Here is a really simple way to earn this achievement without needing to obtain any special items found in chests etc.
Requirements:
Landscape Tool
Discovered a Scorpion (any variation) using the Discovery Tool
Once you have obtained the 'Landscape Tool', you are going to need to select it using the Tool selection wheel by holding
. Once selected, simply enlarge the selection box and remove a chunk of the land to create a cube shaped hole in the ground. When done, you will need to access the Tool selection wheel again and choose the 'Discovery Tool' and filter through to the 'Creatures' section and choose any variation of the scorpion to place inside the hole you just created. I would advise spawning around 10 just to be sure, and then all you will need to do is just jump inside the hole and repeatedly attack the scorpions using the 
button. Achievement will pop after killing your 7th scorpion.

And here I was using giant space spiders like a fool. Keep in mind though - the scorpions will attack each other, so don’t spawn too many or they’ll all be dead by the time you start fighting.

This trophy is a little tricky to do, in that there is not usually 7 enemies on the map at the same time. Fear not, you have the discover tool! One thing you can do is create a hole in the ground and put 7 or more skeletons in the hole. Once completed, fire the bazooka (or drop bombs) into the hole. After a few hits, you should kill what is needed for the trophy to pop.

Dig a large hole in the ground and place 7+ of any enemy you've discovered. Quickly kill them all for the achievement. This is easier with a weapon, and diabolically simple with a bomb (found in random chests).
