I loaded up world "merry meadows" and found one right away, world code "58-947-441 F"

Same as above, you just need to find a sheep and ride it. Sheep can be found in Frosty Forest, Merry Meadows, Whispering Woodland worlds.

Sheep will appear in several biomes, including Merry Meadows and Fantasy Forest. Chase a sheep and as you get close the prompt will appear to ride it. Jump on and the achievement will pop.
